Curried Pea Salad

Ingredients

Bacon:

Vegetables:

Optional peanuts:

Dressing:

Instructions

  1. Cook bacon and place on a paper towel to cool.
  2. Cook peas, drain and set aside to cool.
  3. Crumble bacon into small pieces; set aside.
  4. Place peas in a medium-sized bowl.
  5. Chop onion and add to bowl.
  6. Add crumbled bacon to the bowl.
  7. Add optional peanuts to the bowl.
  8. Whisk together dressing ingredients.
  9. Add dressing to bowl.
  10. Toss salad until coated with the dressing.

Comments

Serves 4 to 6.

Refrigerate unused portions.
