Zucchini Chocolate Cake

Instructions

  1. Preheat oven to 350°.
  2. Grease and flour a 9x13x2 baking pan.
  3. On medium speed mix together sugar, oil, eggs, vanilla and buttermilk for 1 minute.
  4. Add zucchini and mix until just incorporated.
  5. Add dry ingredients to moist ingredients and mix until well-blended.
  6. Add optional nuts.
  7. Pour batter into baking pan.
  8. Bake for 30 to 40 minutes or until a toothpick inserted in the center comes out clean.
  9. Cool completely on a rack before frosting.
  10. Frost with chocolate buttercream frosting
  11. Serve.
