Easy Black Bean Soup
Ingredients
For Single recipe
(Makes 4 one cup servings)
Onion, Garlic, Jalapeño Pepper and Cilantro:
- ¼ onion, cut in half
- 2 cloves garlic, peeled and halved
- 1 jalapeño pepper, seeded and quartered
- 1 serrano pepper, seeded and quartered (optional, use for more heat)
- ½ cup cilantro
Black Beans and Chicken Broth:
- Two 15-ounce cans of black beans, rinsed and drained
- 1 cup chicken or vegetable broth
Spices:
- ½ teaspoon salt
- ¼ teaspoon ground black pepper
- ½ teaspoon ground cumin
- ¼ teaspoon ancho chile powder
Lemon and Lime Juice:
- 1½ teaspoons fresh lemon juice
- 1½ teaspoons fresh lime juice
Optional Toppings:
- Sour cream
- Queso cheese
- Fresh chopped cilantro

- ½ onion, quartered
- 4 cloves garlic, peeled and halved
- 2 jalapeño peppers, seeded and quartered
- 2 serrano peppers, seeded and quartered (optional, use for more heat)
- 1 cup cilantro
Black Beans and Chicken Broth:
- Four 15-ounce cans of black beans, rinsed and drained
- 2 cups chicken or vegetable broth
Spices:
- 1 teaspoon salt
- ½ teaspoon ground black pepper
- 1 teaspoon ground cumin
- ½ teaspoon ancho chile powder
Lemon and Lime Juice:
- 1 tablespoon fresh lemon juice
- 1 tablespoon fresh lime juice
Optional Toppings:
- Sour cream
- Queso cheese
- Fresh chopped cilantro
Instructions

In a blender, puree onion, garlic, peppers, cilantro, drained black beans, and chicken broth.
- Pour bean mixture into a medium saucepan.
- Add and stir in spices.
- Bring to a simmer, cover, and cook for 20 minutes.
- During the last 5 minutes of cooking time, add the lemon and lime juice.
- Ladle soup into small serving bowls (about 1 cup per bowl).
- Sprinkle with 1 to 2 teaspoons queso cheese (optional).
- Add a dollop of sour cream (optional).
- Sprinkle with freshly chopped cilantro.
- Serve.
