Easy Black Bean Soup

Ingredients

For  Single recipe    (Makes 4 one cup servings)

Onion, Garlic, Jalapeño Pepper and Cilantro:

Black Beans and Chicken Broth:

Spices:

Lemon and Lime Juice:

Optional Toppings:

Instructions

  1. In a blender, puree onion, garlic, peppers, cilantro, drained black beans, and chicken broth.
  2. Pour bean mixture into a medium saucepan.
  3. Add and stir in spices.
  4. Bring to a simmer, cover, and cook for 20 minutes.
  5. During the last 5 minutes of cooking time, add the lemon and lime juice.
  6. Ladle soup into small serving bowls (about 1 cup per bowl).
  7. Sprinkle with 1 to 2 teaspoons queso cheese (optional).
  8. Add a dollop of sour cream (optional).
  9. Sprinkle with freshly chopped cilantro.
  10. Serve.
